Bram brings extensive experience shaped by both large-scale hospitality and ingredient-driven cooking. Originally from Cobourg, Ontario, he began his career at Ste. Anne’s Spa before moving to Toronto’s restaurant scene and later joining the Fairmont Banff Springs, where he worked across multiple outlets and rose to Sous Chef. Drawn to Sauvage’s connection to the landscape and its distinctly Canadian approach to fine dining, Bram joined the team and now steps into the role of Chef. He brings strong leadership, technical skill, and a deep respect for Sauvage’s legacy as he guides the restaurant into its next chapter.
Ashish brings years of hospitality experience, including time in some of Alberta’s most respected dining rooms, most recently at 1888 Chophouse. His approach to service is rooted in thoughtful, warm, disciplined, and deeply guest-focused hospitality. Also being a Sommelier with a deep passion for wine, Ashish believes the relationship between food and wine is something truly special. At Sauvage, that philosophy comes to life through a wine library that is personal, curated, and deeply connected to the dining experience.
